About the chef

Trained in professional kitchens. Happiest cooking for people.

Jay Hiscocks has spent 14 years cooking in pubs, hotels and restaurants, including AA Rosette-awarded kitchens and Fairmont Hotels. He has also worked high-volume service for Wagamama, Las Iguanas, Harvester and Center Parcs.

That mix is what 49 Degrees is built on: fine-dining technique for private dinners, and the speed, consistency and systems of busy commercial kitchens for agency cover and consultancy.

Cooking is seasonal and led by good produce, with dietary needs and allergies planned in from the start.

Good food is mostly precision and timing. The rest is generosity.

From first message to last plate

Every private booking follows the same four steps, so you know what happens and when.

  1. 1

    Enquiry

Tell us the date, the number of guests and anything we should know about dietary needs.

  2. 2

    Menu

You receive a proposed menu and a quote. We refine it together until it's right.

  3. 3

    Preparation

Ingredients are sourced and prepared ahead, so the evening itself runs calmly.

  4. 4

    Service

Cooked and plated in your kitchen, served to the table, and the kitchen left clean.
